Powerhouse Muffins

Ingredients
- 1 cup MILKLAB® Almond
- 1 cup almond meal1
- ¼ cups quinoa flakes
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 2 tsp baking powder
- 1 cup raw beetroot, grated
- 1 cup raw carrot, grated
- 1/2 cup desiccated coconut
- 1/3 cup honey
Method
- Preheat oven to 180°C.
- Combine chia seeds, MILKLAB® Almond and honey in a saucepan and simmer for 3 minutes so the chia seeds start to swell.
- Mix all other ingredients together in a bowl then add the chia mixture.
- Grease and line muffin tins with patty pans and sprinkle the bottom with extra coconut to prevent them from sticking.
- Spoon mixture into the muffin tins and bake for 45-50 minutes.
Note: These muffins are meant to be dense and will not rise much. Avoid over-cooking.
