Combine chia seeds, MILKLAB® Almond and honey in a saucepan and simmer for 3 minutes so the chia seeds start to swell.
Mix all other ingredients together in a bowl then add the chia mixture.
Grease and line muffin tins with patty pans and sprinkle the bottom with extra coconut to prevent them from sticking.
Spoon mixture into the muffin tins and bake for 45-50 minutes.
Note: These muffins are meant to be dense and will not rise much. Avoid over-cooking.
